This is my last week in my job. After Friday, I'll no longer be in the non-profit world. After years of pimping out my writing, hustling for money and working myself ragged to keep my department solvent, it's now someone else's problem. For myself, I am going to be a full-time chef. My plan it to apprentice with an established chef full-time for at least two years, working toward American Culinary Federation certification, while keeping my current client list and picking up gigs as I can (cheffing for the Tantra workshops, for example). Having my own full-time catering business is certainly an option, but I'm also looking for something more regular. I've already been working part-time as a caterer and personal chef since about 1995 and have accrued quite a bit of experience. I know a few established chefs and restaurant owners who have offered to help me.
