What will you be doing? Are you starting your own catering business?

My plan it to apprentice with an established chef full-time for at least two years, working toward American Culinary Federation certification, while keeping my current client list and picking up gigs as I can (cheffing for the Tantra workshops, for example). Having my own full-time catering business is certainly an option, but I'm also looking for something more regular. I've already been working part-time as a caterer and personal chef since about 1995 and have accrued quite a bit of experience. I know a few established chefs and restaurant owners who have offered to help me.
