for water dishes, any shallow dish will do. many people fill them with clean pebbles or glass beads...even marbles. this to to make the water more shallow and prevent the spider from drowning or something.

as for feeding, ive had many people say they feed their adults once or twice a week. i just have slings but they each eat a small cricket twice a week.

if you see something that looks like mold OR waste, yes, remove it. neither mold nor waste should be allowed to hang around.

Unless the water dish is like six inches deep (in which case you need a new water dish), there is no reason to put rocks in it. All that will do is make it harder for them to get their faces down into the water.

Tarantulas breathe through their bums anyhow. The water would have to be pretty deep to be a problem there.

Sponges are bad and what you've read/heard is correct they harbour bacteria.

My adults/juveniles I feed once a week, large cricket for the adults and a smaller cricket or a waxworm for the juveniles, exceptions are my A. geniculata who is a pig and my B albopilosa which eats like mad for a while then goes on a long fast before molting, they usually get a couple of big crix a week.
Slings that I have I feed twice a week with a cricket leg or half a mealworm (minus the head).

Could be mold, could be spider poop, either way as harliquinnraver says clean it up along with cleaning any uneaten food or boluses regularly.

Shouldn't need a heat lamp with a Rosie unless your house is really cold, if you're room temperature is comfortable for you in a t-shirt then that's fine for the spider, heat lamp carries the risk of the T getting burned or the tank getting way to hot for it.

It depends on the spider of course, but generally they don't need to be fed every other day. I give my rose hair 2 - 3 crickets once a week, and he seems to be fine. He also likes to go up to a month without eating at a time, so don't panic if yours does too.

Heat lamps are... well, I'd recommend a heat pad, attached to the side, but below dirt level, if the spider really needs heat. Most do well at room temp, or a little above, so if you're comfortable, your T is probably comfortable. Heat lamps, and especially ceramic heating coils, can dessicate Ts.

As for the height/falling issue, you'd be better off just raising the dirt level than trying to add high spots. That way, regardless of where they fall from, it's equidistant to the ground.

If you have a male, he's going to wander and climb quite a bit. I make sure the substrate is pretty high up to prevent long falls in my gold knee's 5 gallon. She doesn't climb, but it's just in case. Clean anything funky looking out of the tank to avoid mites, just be careful of his web mat, they don't like that messed with XD. I feed my girls one cockroach each a week. Seems to keep them happy.
