I need recipes!

For good, filling vegetarian food that I can make in large quantities and then chuck in the fridge for a few days. I'm good at following recipes, and I don't mind spending some time cooking, but I'm not particularly skilled or experienced. I also can't eat nuts of any kind. How about a veggie chili? It could be made part meat very easily. I'm pretty sure it is gluten free (corn and beans are good, right?).

ETA: I was so excited I might have a recipe to suit I replied before reading through to the end. So: want my veggie chili recipe?

Better than making veggie chili part meat: Making veggie chili with vegetable protein fake meat crumbles. Since it's seasoned, you can't taste or feel the difference. Good for vegetarians AND omnivores, in one dish. ^_^
Same thing goes for tacos too.
That's what we do at my house, so my veggies-only mommy can eat with us.

Oh boy can I hook you up.

Here's my favorite recent recipe:

Get equal parts sweet potatoes, turnips, parsnips, carrots, and regular potatoes. About half to quarter a part onions. Peel and chop all according to your taste (ie how big you like your chunks of veggies) - I usually chop into about 1-3 cubic inch pieces.

Place all the veggies in a large casserole dish - add some thyme, salt, pepper, and garlic to taste, as well as sprinkling with olive oil or melted butter (just a bit). In addition, add enough tamari (or soy sauce, which will be a little saltier) to just coat the veggies and pool just a smidge at the bottom of the dish.

Cook at 400 for about 1.5-2 hours, until the veggies are soft when poked with a fork.

Nom nom nom.

I'm sure you could add some ground beef, or something. I don't see why you'd ruin perfectly good veggies that way, though. :)

Does it have to be good for you? Because baked-in-the-oven, made-with-vegetable-stock stuffing is mad filling and can be served with potatoes and all sorts of other things. I have a good recipe for that. Mmm. Also, some pasta dishes. Also, actually, if you can use estimate with your eyes recipes, I have a nice sauce for going on rice noodles which is sort of like pad thai sauce only not.

Oh, I would love the sauce! I adore pad thai, but the peanuts make my face explode and I'd rather not have Mt. Vesuvius on my face. (And my mama is constantly eating rice noodles, so we have those around.)

Any and all recipes would be awesome.
