Oh buttercup squash, why art thou making me miserable?

I have squash. Jay hates squash because he's only ever had it boiled to mush and mixed with maple syrup or brown sugar and cinnamon. I've been looking for recipes for a half hour and all I can find are sweet recipes or curried recipes (and he loathes curry).

Is there no other purpose for winter squash? Does anyone have any simple suggestions?

i like to make mine into a simple, pureed soup with ginger and spices.
you can peel it, cube it, toss it in oil and salt and roast it.
you can peel it, cube it, toss it in oil and salt and pan fry it until it's crispy on the outside (and then use it in a salad or whatever)
you can bake it, scoop it out, blend it with the baked flesh of potatoes and some sour cream/sauteed onions/garlic/whatever, scoop it back into the skins, top with bread crumbs, and then bake it again until it's hot.

Thanks! I'd just been considering chopping it with root veggies and roasting it in the oven with oil and seasonings, but was afraid that it would get too soft or that the flavours wouldn't mesh. I think that I may try your squash / potato idea, since Jay would eat that and I was thinking of baking some potatoes anyway. If there's any left over, I'll make myself some soup, methinks (I'm on a ginger kick -- I love it so much). I think that if I try enough of these ideas and expose him to it that he may come around. He thought he hated cauliflower when we first got together, as well, but it was just because he'd only ever had it boiled.

And mothers wonder why their kids won't eat their vegetables. Go figure.

I tried out with the twice-baked potatoes and using some sauteed onions and garlic and it was delicious. Jay really liked it, so I'm happy. I'm going to pick some more up tomorrow and make some soup or something else with it.

Squash is unreasonably good with tomato sauce. You are wondering how I discovered this? I made squash for Zach and we had spagetti for supper, i mixed his squash with spagetti and tasted it for temperature before feeding it to him and it was so good next time I'm going to have a whole serving to myself.
