Recipes for the Cooking Impaired: Thai Coconut Chicken

Dec 31, 2009 23:27

Tonight (New Year's Eve) I was bold and attempted "cuisine" -- this turned out surprisingly well! Bold (for us) flavors, a hint of "presentation" in the serving... it was definitely a step outside of my comfort zone, but what a payoff! ALL the kids ate it, and one went back for seconds. There is very little left over.

I have to try that!! It sounds very yummy, indeed.
Happy New Year, my friend!
Ron sends his regards, too. Was just here watching "Fellowship of the Ring", director's cut. Then I showed him "When I Go" and a few other LotR fanvids. Mutual pimpage has occurred.
Remind me to tell you about "Rock Me, Sexy Jesus".

yay for pimpage!

Please give Ron my regards. He is always a joy to see when I visit you.

The recipe was very good. When *P* is cheerfully snarfing the veggies, there is something very right. You could probably use half the amount of coconut milk (and lite coconut milk at that) and still have a good sauce. Next time out, I will play more with the recipe. (Ponders red peppers)

What about roasted red peppers? They might give a nice offset to the sweetness of the coconut milk, onions and peas.

red peppers would work very well, I think. Either fresh or roasted (I like peppers best when raw). The recipe was less sweet than I thought it would be, really.

Looks like an interesting recipe. I just don't like green onions. At all. I usually leave them out if I can. Or rather, replace with regular onion.

Happy New Year!

I'm sure you can substitute regular onion -- I'd use red onion or a Vidalia sweet onion. Please let me know how it turns out if you try it! *g*

Not strongly. The coconut milk adds more of a mellow nuttiness than a sweet coconut flavor. I love coconut, so next time I will probably garnish with toasted coconut flakes.
