Recipes for the Cooking Impaired: Banana Oatmeal Muffins

I almost called these Invisible Muffins or Evaporating Muffins because they don't stay on the serving plate for any measurable time that I was able to discern. Easy prep, a reasonably long cooking time for a muffin so that there is time to make tea, slice fruit, or simply put your feet up and enjoy the aroma.

Banana Oatmeal Muffins

Um. Does it matter on the maturity of the bananas? Like, do they need to be really ripe?

My bananas were *really* ripe -- like "vaguely fermented smell oh dear I'm gonna have to use them today or throw them away" ripe. In general, the riper they are the stronger the banana flavor you're going to get and the easier they will mash.

The muffins are moist and fairly dense in texture, and smell *heavenly*. I made them this morning, and the house still smells good. *g*

*waves* I've been pruning back my LJ reading list in fits and starts for some time now. It's not personal, merely a reflection of my own hectic schedule and the overwhelming demands of RL. Something has to give, and right now it's my online time and reading lists.

I do dislike that LJ calls it "friending" and "unfriending" when a more accurate description is "adding or removing from my reading list." I wish you all the best in your own efforts to wrangle RL.

It's not the name. It's early fandom trauma. I used to only get unfriended over wanks. (I pumped out fic at a staggering "I'm-in-school-and-don't-have-a-job" rate so the flist grew with each fic.)

It's Pavlovian. My heart sinks every. single. time.
