Fudge attempt part deux

Tried the oldfashioned fudge recipe today.
Another failure-this time I ended up with chewy chocolate caramel. While delicious it is NOT fudge and fudge is what I want. Yesterday too soft, today too hard.......

Giving up and going to See's tomorrow. No store sells fudge here. You can get fancy choc truffles everywhere but not fudge. bah humbug!

Fudge is tricky - as you've already noted. Three degrees in either direction and you get something else than what was intended.

Perhaps is your candy thermometer miscalibrated?

Bung it into a pan of boiling water and see if it reads 212 or something else, entirely...

I think the thermometer is messed up. I haven't used it in a couple of years and its been banging around in the drawer...sigh........

I whiped a little dish up this afternoon with Wal-nuts which turned out ok. I kept it in the fridge,and didn't bother cutting it into squares. I'll just use a big ole spoon and scoop it into my mouth. Cause chances are, I'll eat the whole pan.

It's so easy I feel like it's cheating!

3 cups (18 oz.) semi-sweet chocolate chips
1 (14 oz.) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
dash salt
1/2-1 cup chopped nuts (I prefer pecans)
1 1/2 teaspoons vanilla extract

Melt chocolate chips and sweetened condensed milk and salt together in microwave or over low heat. Stir in vanilla and (optional) nuts. Line 8 or 9 inch square pan with foil or wax paper, and press mixture into pan. Chill 2 hours or until firm. Turn out onto cutting board, peel off paper and cut into squares. Makes about 2 pounds.

I usually double the recipe. You can also make a sweeter fudge by using half milk chocolate chips and half semi-sweet. Eagle Brand also has a ready made kit that uses both kinds of chips. Quick, easy, no fuss, and delicious!

ok, duh now I know what happened.

Both you and kevin had that recipe and I wrote down the shopping list. I used evaporated milk....DUH!!!!!!!!!!!NO WONDER its sauce!! LOL Well its good sauce and if you want to make killer fudge sauces for icecream-there ya go!

lordy-fibro really makes the brain mush! geesh!
