I've never frozen them before but I think they'd freeze just fine. In fact, this is one of the things I'm hoping to freeze and have around for after baby is born. ;o)

I know! Part of me always feels a little "ghetto" when I make a Campbell's soup recipe, but you can't argue with how easy and tasty they are1

My aunt makes a similar dish with the Old El Paso Green Enchilada Sauce (instead of Pace Picante). Heat it up with sour cream and Campbell's Cream Soup (cream of anything will usually work - chicken, mushroom, celery).

She just layers everything in a casserole dish - dips tortillas in the sauce, then chicken, cheese, she puts in black olives, sometimes even diced green chilis, and then spoons some sauce over and repeats. Same idea as yours basically. If you ever want a little change, I HIGHLY recommend the green enchilada sauce! We LOVE it!
