Both of those are really broad fields! What KIND of criminal law? public? private? prosecution? defense? What KIND of public interest law? That could be anything from immigration, to women's reproductive rights, to adoption law.
What about education law? That could mean anything from working on affirmative action cases, to school districting, to going abroad and working on educational access for the poor.
You don't get to decide on any of your courses till after the first year anyway - so I would pick a school where you'll be happy and figure the rest out once you get in!
Re: your later post - U Chicago is famously the most conservative of the top 14 - plus I'd rather have you at Northwestern :)
