So, just finished week 2 of my Introducing to Baking and Patissire Class and it was mainly about lean yeast doughs and such. Anyways, here's some of the products I had procured. =3
During this week, I had to make 3 baguettes per day using a Pain Ordinaire dough. I didn't get a pic of EVERY day, but here's two days. Day 3 and 5 to be exact
Here is my Challah dough that was fun!
This is some Foccacia bread that I had made. I did a half sheet pan's worth, and cracked three eggs into the dough to bake as well. I wasn't fond of it, but it was something different to try. Hehe
Here are loaf breads. Basically what you buy at the store. Just some basic loaf bread, and then a pullman loaf! =D
Pita bread! Woot! We actually made some hummus that day as well to go along with them. Yum! Also makes great pita pockets. Lol
Mmmm... Pretzels. Well, mine were more like pretzel rolls. Lol. I basically just didn't roll them out thin enough for the twist and positioning. They still taste the same though.
Yay! My Vienna loafs! This was a tasty bread. Though, my slicing wasn't correct. It's hard to get that "flick of the wrist" down. And I only had these three loafs to do it on. Hehe
Day 5 we had a pizza competition. Everyone in the class made their own dough either from our recipe packet, book, internet, or even of their own creation and we each made our own sauce as well. The competition was making a great pizza limited to only three toppings, cheese included. My pizza was a Pesto Foccacia with Sauteed Portabello Mushrooms, Sundried Tomatoes, and Kalamata Olives. It was rather yummy. I was one of two student who used a pesto sauce. I didn't win and while I don't know for sure what place I got, I actually was in the top five out of about 25 students. Here are before and after photos. While the pizza may look a bit burnt, it actually didn't taste it all and the dough was great! =D
And my landlord bough a chicken earlier this week and forgot to cook it that night. Well, he pulled it out and I totally taught him how to cook this amazing chicken! He said it's been one of THE best chickens he had ever tasted! And you can't see it, but I did make a stuffing using one of my baguettes, carrot, onion, celery, garlic, thyme, sage, s&p, and a little milk and egg.
So yea, one more week! Rich Yest and Laminated Doughs and my final are to come! Then it's off to Advanced Garde Manger! WOOOOT!
