How much Sanctuary do I need to watch until it's safe for me to read this? :D

Well, it spins off the second to last episode of season 3. But there aren't any real spoilers for anything except the major end of s. 1 arc and s. 2 arc. There are references to things from a lot of episodes, but they're deep in Will's brainspace so unless you're super-attentive to them or really spoiler-sensitive, they probably won't tweak you.

There's a lot of character stuff that may seem OOC to you if you're still early in s. 1 because Will grows an enormous amount as a character in later seasons.

OTOH, the story itself takes place in a year and a half that is non-canon, and it is completely AU.
