CAKE:
3 Eggs
1 C. Sugar
2/3 C. Pumpkin
1 tsp. Lemon Juice
3/4 C. Flour
1 tsp. Baking Powder
2 tsp. Cinnamon
1 tsp. Ginger
1/2 tsp. Nutmeg
1/2 tsp. Salt
If you want nuts in it 1 C. Nuts
( I don't put nuts in mine)
FILLING:
1 C. Confectioner's Sugar
6 oz. Cream Cheese
4 table spoons Butter
1 tsp. Vanilla
15 x 10 x 1 pan 375* 15 minutes
Beat eggs at high speed for 5 minutes; gradually beat in sufar, then stir in pumpkin and lemon juice.
Stir together the dry ingredients and fold into pumpkin mixture.
Spread in greased and floured and waxed paper lined 15 x 10 x 1 pan. (optional top with nuts).
Bake at 375* for 15 minutes.
Then turn cake out on towel sprinkled with confectioner's sugar.
Roll like a jelly roll.
Let cool.
For filling combine and beat until smooth.
Then unroll cake and spread on filling.
Reroll and chill for at least an hour.

1/2 Stick real butter
1 (8oz) Cream Cheese
1 C. Powdered Sugar
2 (3 1/2 oz) pkgs. Instant Vanilla Pudding
3 1/2 C. Cold Milk
1 (12oz.) Cool Whip
1 (20oz.) pkg. Oreo Cookies
With electric mixer mix butter, cream cheese and powdered sugar.
In seperate bowl mix pudding, milk and cool whip.
Mix both bowls together.
Crush cookies.
In bowl of your choice layer crushed cookies and pudding mixture, repeat until full.
Top with remaining cookies.
Chill- preferably overnight.
