I wouldn't try to make a fishing hook, but a decent spear should be no problem.
If you have a small camping axe( 1 - 1.4lbs) it's no problem gutting fish with one. Fileting may be a bit more difficult, but not impossible if the edge is sharp enough. Not that you'd ever do anything like fileting fisk on trips like this. Just chop off head and tail, gut it and poke a stick through it. Of course, my 'hatchet' isn't that. It's a cheap one that's supposed to look like a military kit and consists of a metal tube for handle, a saw-blade hidden inside it, and a shovel and axe-head to fasten to the end depending on what I need at the moment. All in a cheap belt holster. (It wouldn't hold up to military use, but it's OK for the occasional overnight trip) The GOOD axe, with hickory handle stays at home. (Very nice for splitting firewood into kindling)
At least he got the number of changes right. You wear one during the day, then change into the other after camp is set up in the evening.

Besides, everyone know a small axe is much better than a knife, i you only bring one of them.
One item tht is never discussed, and which Ray Mears has also never mentioned(he probably doesn't eat enough) is toilet paper...
sure you can use moss or broad leaves, but what if you're in a pine forrest?

Probably good to carry both a knife and a hatchet.
At any rate, since this is an organized summer camp, toilet paper, food, tents, etc. are provided by the staff.
