Aha, now I get it! I'm actually Anglo-Swiss, brought up in Switzerland, so I'm very familiar with polenta. I like it pressed down into slabs and baked with wild mushrooms, or with cheese. Or hot, fresh and soft with char-grilled peppers. Or sometimes fried. Which sounds very much like the way you serve grits.

If you like polenta, I think you will like grits. Fried cheese grits are a wonderful thing - basically leftover, refrigerated cheese grits that have been dusted with flour and fried. Yummy.
In a specific part of Central America I've had a soup that's essentially the world's biggest pot of grits with a chicken boiled in the middle. It's really the universal food of corn farmers everywhere!
I eat brown sugar on my grits. Other Southerners laugh at me, or possibly recoil in disgust, but this is what happens when you have a regionally mixed upbringing! (won't someone think of the children and their grits)
Grits are...wonderful. This is no lie. I love your post about it, hope. Magnificently done! And the Bubba Burgers were splendid! Now you've got me wanting some grits.
