Like Christmas in Winter it comes from the co-opting of more acient "pagan" ritual. It is part of the welcoming of spring and praying for fertility. Both rabbits (who bread prolifically) and eggs (external proof of fertility) are fertility symbols. Spring is the time when a lot of animals breed. :D

Easter was a Saxon goddess of fertility - rabbits were her symbol since they fuck like rabbits - who was revered in the spring time with a big pagan party in the hopes that crops and animals (food) would be plentiful in the coming year.

Eggs are Jewish birth/death symbol.

So, Easter has nothing to do with Christianity until the priests moved the Passover day to coincide with the Saxon's Easter in order to get more converts.

*various spellings since Saxon's were mostly illiterate and their were no rules for English spelling until early 1800's.
