When I moved into my new place I got all my stuff out of storage. My pots and pans were worthless. But I did have one 6 inch chef knife (stainless ste\el) - it held up quite well after about 10 years in storage and looks almost brand new. I don't know how well it'll stand up to ten years of use - but I'm impressed enough with mine just coming out of storage. It has a solid plastic handle - but that's okay by me.

Good knives are worth the expensive - I just can't afford any...yet. But soon....soooon.

Well, apparently this would have been perfect, but they're out of stock.

Being the geek I am, I'm fascinated by Russell's VG-10 Core Damascus knives. I bought the bread knife for my aunt. She hasn't complained, but then again, considering the piece of crap Pampered Chef one she had before, that's not saying much. (It was weird--all her other knives are good knives... but since her sister sells Pampered Chef, somehow she got stuck with that useless bread knife.)

I thought it was interesting that Cook's Illustrated rated some stamped knives higher than some forged ones. In general, I understand the idea that forged would be better, but I think it depends on the individual knife.

I agree. They seem to meet your requirements. I'm pretty sure they've got a full tang and the handle is resin; not squishy. Of course they meet your size requirements. I can't imagine any knife company not being able to do that.

Heh. I'm no size queen. Meeting my size requirements in a knife has been easy to do. < grin >

One of the top pieces in my collection is a very finely crafted switchblade, a gift from my uncle. It's just under an inch and a half long.
