In movies that were adapted from books, why do they add scenes when they claim they have to take so much of the main plot away because of time constraints?

I'm going to Pennsylvania today.
And coming back tonight. Yeah, it's a 5 hour drive each way but my parents think they can do it.

We haven't had hot water for 2 days. I haven't showered in 3 freaking days. The baby hasn't had a bath in 3 freaking days. The stupid person that was supposed to come yesterday to fix it never showed.
I want to take a shower!

What the hell happened to my child? It's 10:15 and she's STILL screaming! She's back to only sleeping when held.
She was doing so well with sleeping alone :( The only thing that changed is my mom is in NYC this week on business and since she left on Friday things have been awful.
Next Friday cannot come fast enough!
