You can roast or dry the peppers. Unfortunately, poblanos are not used in making Mole sauce, which is too bad because I'd love some right now!

Mmm mole...I should try my hand at making that. Unfortunately there are SO many recipes and variations...I wonder which I'd like. Maybe you'll have to come down here and we'll make a different mole every night! Or would that get tiring. Hmm. Well, we could have different wines to spice things up.
