Oh, it's okay. I've been not-hungry lately due to a head cold/sinus infection (not sure which, doesn't really matter) so reading about delicious food is nice. (:
I made some pork/pineapple/coconut meatballs awhile back I think I could render even better with chicken or maybe even some seitan for texture. I've been toying with making recipes veg and gluten-free to accommodate staff members at my schools and some of my experiments come out tastier than others.
Those meatballs sound really good. I'm on a coconut kick these days.
Most of what I've been cooking has been gluten free lately, I'm enjoying the challenge of modifying what I eat to suit. For the most part it has worked out. Not always (I don't talk about the failures).
I really like posting about food. I think I will stick to it, even though I really only have to cook a few times a week (I cook for 3-4 people and live alone, so lots of leftovers).
Sound delicious! I make a zucchini lasagna. Basically what you made but instead of eggplant (which I don't like) I use thin slices of zucchini. I make a thick meat sauce with bell peppers and enoki mushrooms and lots of garlic and onion. I love it :) Glad you enjoyed your Mousaka! :D
yeah, that's how I efel about eggplant. lol I actually didn't like zucchini until just last year...so maybe one day I'll be able to enjoy eggplant too.
