Freshly back from a week in the desert, I was craving simple, fresh foods, and tossed these two salads together. Only as I sat down did I realize that both are made with ingredients you can get at just about any time of year. Bonus

I had CSA beets and a giant cucumber and some salad greens to use up, so I roasted the beets and julienned them and thin-sliced the cuke--dressing is yogurt, a ton of chopped garlic, mustard, lemon pepper, and a little sugar--no oil.
