Not Macaroni and cheese

I often make things I shouldn't eat, but they rarely come out this good. This is sort of a play on mac and cheese, and traditional Swiss cheese fondue. I am thinking of calling it "Alpine Surprise". So here goes ( Read more... )

At first I thought, granny smith apple in mac & cheese, WTF? But then I decided it must be a nice counter to the taste of the ham.

Can't do hard cider. Please to be suggesting substitutions? In case I go crazy and try to make this...

While most of the alcohol should cook out, you need to do what you need to do. I think that a good sweet cider, or maybe martineli's sparkling apple juice might work. And actually the apple complements the nuttiness of the cheese. Apple and cheese are a classic combination.

(the Pasta del Geremio part was easy)

And I suggested bread instead of pasta in the first place, but pasta won.

According to one online translater, Svizzera means Switzerland
