Undoubtedly these are super and worth the effort, but the hunger factor might just have influenced the rating. I'm reminded of a Boy Scout who returned from his Philmont trip all enthusiastic about the fantastic dried meals they ate on the trail. Tried again at home, their appeal somehow had diminished - brings to mind the old adage: "Hunger is the best sauce."
Those do sound really good though. If you know you're going to make these, you could always pop the lentils, water, and salt into a slow cooker in the morning and let them cook on low all day. Mine has a timer so that I can set it and leave it. At the end of the cooking time, it moves to warming mode.
Oh and for extra flavor, you could also cook the lentils and/or bulgur in veggie broth.
I want to make these, even if they are a bit time consuming.
Do make them: they're really good. None of the components takes too long to cook: it's just that there were many of them. The lentils only take 20-25 minutes.
You could, of course, make some of the components the day before, and have them in the fridge, ready to throw together.
you know something, I ahve been checking out this magazine since you told me about it!! I don;t cook with lentils enough, so maybe I should try this recipe!
Lentils are delicious, and they don't take anywhere near as long to cook as other dried beans. Just cooked lentils on top of rice with toasted sesame oil and a little tamari? Really good, and much better than the sum of its parts.

(I think "sea scallops" is funny. Like, as opposed to "desert scallops"?)
