That cake looks absolutely delicious, but peeling three pounds of beets sounds like an awful lot of work just to moisten a cake! I wonder if it's worth the additional effort than just to throw in a box of pudding mix or something. (This, of course, is the voice of One Who Hates To Cook, so don't mind me.)

We will be in cell-phone touch as we approach you. Also, did I mention that we probably will have eaten? We probably will have eaten. Although if there is any beet cake left, I totally want to try it!

Rats...the cake is gone. But I have some bunny shaped rolls in the freezer. They are beet-free, however.
