IME, restaurants that advertise "open until late" usually mean roughly "open until 9pm unless we still have customers in then. Maybe 8:30pm if it's a slow night and we want to go home."
Exactly. But it also might depend on where they're located. "Late" in the heart of NYC is probably going to be different to the "late" in Podunk, Smallville. And that's without getting into what different countries and cultures consider late.
It comes down to having a rough idea of what your local "late closing" means... but the people who already know that aren't going to be the ones visiting the websites.
