Holy Frijoles!

A cooking kind of mood settled on me this afternoon and I checked out the kitchen for inspiration. My eyes fell upon a bag of serrano peppers grown by a coworker and gifted to me. A quick check of allrecipes.com (one of the best recipe sites Evah, I am convinced!) yielded a delight that has flat out made my evening.

This was the base recipe. It is possible that a few more peppers than called for were added. Quite possible. My own garden has produced more tomatoes than I know what to do with, so I pureed some and added them to the basting sauce as well. I served the chicken with Mexican rice (brown rice with beans, corn, spices, and more pureed tomatoes). A simple thing, I suppose, but finding the recipe, spending good time in the kitchen, and ultimately enjoying the heck out of the meal has seriously made my night.

The smoky hot flavor was under-woven with the sweetness of the honey, the tartness of the lime, and the surprise of cinnamon. Wow. Good god this meal made me happy. The colorful peppers and tomato made for a very pretty presentation as well - I wish I had taken a picture but I was too excited about digging in! If any of you friends o' mine groove on spicy meals, I promise to make this one for you.
