Yes that's totally fine. As long as you indicate to us in the final submission what your fandom is, it's fine. The sign up form is primarily a formality and to give us an idea of what you're going to do so we can keep track.
You can absolutely change the fandom you're writing for. The only thing that cannot be changed is the sport you claimed unless an arrangement is made with the mods.
