I have four runner ducks, who are utterly adorable but have a slightly unfortunate side effect, particularly at this time of year: eggs. One each, almost every day ( Read more... )

We'll bring more egg boxes when we come. We all love eggs. Mmm mmm mmm

ok that wasn't actually helpful, was it. Zabaglione?

Also, might your farm shop sell some of your eggs in exchange for, say, cream? Or do they have plenty of duck eggs of their own?

It's possible, but I suspect that they'd want greater quantities than we have.

But yes, you can take some way when you visit! (We really have plenty of egg boxes, though.)

I second the idea of freezing them, split them so you have whites in one bag and yokes in another (two eggs per bag is a Nigella trick).

I would say duck egg meringues are pretty amazing, I haven't tried them in cakes as they tend to get used with me for custard.
