If one team scores enough goals in their own matches, and all the other team games end fast, they could lose every match and still win overall. So sometimes teams have to make play continue, even if they see the snitch, to close the difference. But if you're down sixteen goals, sometimes it makes sense to catch the snitch anyway, because then you lose, but you only lose by ten points, not by three hundred.
