Makes me REALLY happy that all of my beef comes from cows I know, raised mostly on grass. (Winter in WI makes that a bit difficult.) Yay for food grown within a few miles of home!
I grew up hiking near buffalo (not in New York). Now we eat them; grass fed in a wonderful environment. I'm on a waiting list at the library for the latest Michael Pollan book - In Defence of Food. And while we have cut back on carbs, the plan is still - mostly plants... (not much rice, potatoes or grains though - I had 3 french fries today!)
