It depends on the guest. If I'm having people with adventurous tastebuds, I will be more than willing to whip out the big guns and make a Lamb Fricasee or Pastitsio, but when I have people who think roast chicken is a departure, then I stick to the more simple stuff, like....roast chicken. Adventurous guests are more fun!

I agree! I love really creating things for guests. Meatballs are a really good staple for guests, too.
