I'm envious of the root cellaring. How cool is it in your cellar?

I'm not sure exactly. Some previous owner of the house was seriously into wine and created this special cellar closet; it is significantly cooler and moister than the rest of the basement. It's worked really well for the carrots and beets, probably would work for turnips and such, too. But not good for potatoes, onions, and squash because of the high humidity. I should check the temperature sometime.
