Like I said, this is really a loose guide for you to experiment with, not a strict recipe, which is why I haven't included rigid measurements. By a splash, I mean just a small amount of water, say a tablespoon or so. There's really need to measure. The purpose of the water is just to help the apples to cook evenly and prevent them from sticking to the bottom of the pan.
Yeah, a quill and a stick of cinnamon is the same thing. Like I said, this is really a loose guide for you to experiment with, not a strict recipe, so sure, you can measure out three cloves, if you like it a bit spicier in flavour, then you can add more, or you can just one or two for a milder flavour. It's totally your call.
