honestly; my baked goods fall if i check on them/open the oven too many times while they're not fully baked. you may also want to test your oven temperature. Are your baking powder and baking soda new or fairly new? i've baked with old baking soda and had issues as well.
yeah the oven is new, this was actually only the second time I did cupcakes. last time I made the coconut coffee things and they were fine... maybe I did open the door one too many times. I need to learn to be more patient. gah :(
i have had too many things "fall" from opening the oven too early on in the baking process. i'd just try it again since the recipes in VCTOTW are pretty great :)
yeah they definitely are. now I just don't know, as I wanted to do them for a birthday. so I either stick with the coconut ones, after all with those I know how the oven will react... or give the mexicans another try. but I'm also running short on money. sigh.
Never ever open the oven door before you're half way through baking. I'd even go as far as to say don't open it before 3/4 of the way through. Also, don't knock the pan around too much, treat it very carefully. When the cake is still hot, the structure of it is still forming, so knocks (and temperature changes) can very easily cause deflation, especially in vegan cakes when there are less structure builders like eggs to help you along the way.
