That's really interesting -- thanks for posting that, Dani! Now I'm wondering how the carbon footprint of chicken or pork compares. When I look realistically at my diet, I see that I actually rely very little on beef. A steak or a hamburger maybe once a month, but for the most part my meat consumption is bacon, chicken & turkey or pork sausages, salami, chicken breast, chicken noodle soup, etc. I don't even drink cow milk or use real butter any more (though I do eat a fair amount of cheese). I do still try to do the "local" thing when I can, but it's really interesting to know that avoiding beef does more for the environment than buying locally.

From what I've read, beef is the absolute worst, and really anything coming from a cow is almost as bad. Sadly, this includes many cheeses ( ... )
