I'm trying to stick to the kosher thing most of the time, so vegan-friendly meals are of massive help to me as I can't eat any dairy with or within a few hours of meat, nor any dairy if I'm going to have a meat meal (so vegan side dishes are also useful). My main problem is finding veggie or vegan recipes that don't involve tofu, because I'm allergic to soy and can't have it.
