I started Contemporary Cuisine this week. After not being at the South Campus for 3 weeks, I miss the South Campus. I miss the new facilities, the accessibility, and the parking. Yesterday for the CE classes, I was paired with Chef Damon who taught Thai food. It was really fun even though my foot hurt like a bitch from standing afterwards. In class today, Chef Stazi didn't show. We got Chef Jude instead. He taught us how to fillet a dressed salmon. He made it look really easy. My first impression of it after my first filleted salmon: it's hard! That's a big fish. Granted it's not as big as tuna, but it's still big. My fingers got really cold and fishy smelling from it.
