I bought jerusalem artichokes at this morning's market. I've never actually eaten them before, and have no clue how they should be prepared: any tips? (Or as my friend said about this morning's market: this is why people are omnivores. There was, admittedly, a pretty wide variety of root vegetables, but oy. Sunchokes! You can cook them like you would potatoes; that is, any way you can think of, with or without the skin, or even raw. The easiest way would be just to toss them in boiling water until they are soft, and serve with a little bit of salt and pepper. I like slicing them up and roasting them, but I roast everything.

You can boil them and mash them with cream, pepper, and salt. That's pretty standard. Or you can mix them in with potatoes to make a standard gratin. Or with sweet potatoes and a leek and Gruyere for a better gratin!

jerusalem artichokes are good fried in your favorite oil/grease/butter, esp. with onions & potatoes. mmm mmm. i've never seen them for sale, only pulled out of friends' yards here in new england. :)

also, my sister bethany (who you may not remember) wants to visit you in a few months! she'll be in town. :) i should send you an email.

how were your holidays?!?! my mom came up here & was asking after you. she sends her love.

Holidays were fairly productive, thanks - stayed in Edinburgh to get caught up on work, and that worked out fairly well. Yours?
