Sounds like yours turned out a whole lot better than my recent effort at roasting potatoes, acorn squash, carrots and cauliflower in a mix of olive oil, honey-mustard marinade and balsamic vinegar. Even though the flavor mix tasted good before adding it to the veggies...I would not recommend it. Looks like I still have a lot to learn about roasting veggies. No wonder you had to suffer through lentil loaf.
Your root veggie roast has inspired me to make a potato casserole type thingy for dinner. (it's kind of like what you made, only without the gross vegetables in it! hahaha.)
