So I've got this ...idea.

I want to make a cold dish. Some might call it a salad.

Here's what I know I want in it. Rotini noodles, chunks of chicken breast that have been cooked and diced, olives.

I've had this idea in my head for a while now. I have no idea what to moisten it with, or what to add, or...anything.

Ideas?

help me dr eljay, food

If I'm lazy, Bernstein's Light Cheese Fantastico dressing is my favorite, but anything that is a nice oil & vinegar blend. Spices are to taste.

I think the broccoli is good and you can get just the florets packaged, but I'd go fresh and just cut the florets at the point where you like them. I saw it suggested, but I want to throw in my recommendation for the artichoke hearts ...mmmmmm They add a nice zing to it. I've even added pine nuts to mine a few times, just for a little crunchy texture.

You're making me hungry....

I've never seen broccoli packaged like that but yeah..I just chop it myself since I'm little miss picky.

See now I've never had artichoke hearts so what if I hate them and it ruins my meal?

Go eat something!

Don't forget to add roasted garlic cloves and a sprinkle of Mrs. Dash seasoning. I would have suggested pesto, but you want a cold salad. I'm not sure how good cold pesto would be, except on pizza with shrimp. Good pizza is still good at nearly any temperature. Maybe you should make a pizza salad?

I would add good seasonings dressing mix made with balsamic vinegar and Olive Oil, I would also add some peas and chick peas for color and consistancy.
