I have found that I like the magazine Cooking Light and many of their annual hardcovers. The food is stuff that we actually cook and eat, the recipes are simple, and the taste and simplicity are pretty consistent.
I like looking at Saveur, Food & Wine, Gourmet, and many of the others, but I actually make some of the recipes in Cooking Light.
I'm personally an omnivore, but if you like vegetarian Indian food, then you might want to look for the cookbook entitled Lord Krishna's Cuisine by Yamuna Devi. I got my copy at the local temple (even though I'm not really a participating member of any organized religion, myself), but it looks a lot cheaper on Amazon.
