butternut harvest

The garden is starting to slow down production now that it is fall.  We are still getting quite a few peppers and the basil and chard are still thriving, but the tomatoes are done for the year.  We have 9 butternut squash to harvest still.  I bought a tiny 4 pack of butternut seedlings at the grocery store in July, when everything was wilted and ( Read more... )

I like to sautee it with green squash and onions -- just long enough that the onions turn clear and taste a little sweeter. Sauteed squash, black-eyed peas, and sweet Jiffy cornbread is a staple Southern dinner in my family. Sometimes we make okra and tomatoes with it as well.

That sounds really good. I will have to try this whole meal sometime. I'm really interested in learning to cook some vegetarian Southern food.

Yum. Suddenly I want Corn Ole.
Cube the squash. In a large fry pan add squash, chopped onion, chopped tomatoes, bag of frozen corn and generous amount of butter. Salt + Pepper. Cover and cook until squash is tender. My mother always made this and now I crave it every fall. She calls it "Corn O-lee" instead of "O-Lay". :-)

I made this tonight and it turned out great. It was slightly different, as I used about 10 banana peppers from our garden, chopped onion, garlic, squash, butter, hot sauce, frozen corn, and no tomatoes. It turned into sort of a giant mash that we put into flour tortillas and slathered with salsa. Very delicious, and very easy to make.
