Jazz music was really started in New Orleans...so anything related to jazz.

Crawfish (kinda like shrimp) are also a Louisiana staple.

I doubt that was helpful, but its all I can think of right now.

Jazz, blues, cajun food, crocodiles (or is it aligators?), swamps, French influence.
