It's been unusually cold in Phoenix over the last few days. I know that's kind of an eye-rolling statement for anyone experiencing a real winter, but it's a bit of an adjustment for us, especially after last year's mild winter

I'm glad to hear the cold is unusual. I'm supposed to go to Vegas next week and was startled to see the forecast there this week about the same as it is in Chicago. Fortunately it goes back up next week.
I would love to see photos of the garden space at some point, if you can manage it relatively easily.
Things froze out here in eastern Texas just before I left for holiday travels, and I had to pull in all of the green tomatoes off of the tomato plants. I also brought in the basil plant and one eggplant. In some respects, I was all right with the freeze, because I need to relocate the vegetable garden anyway.
Have you ever made Baba ganoush? I suspect it would freeze well. Or make some sort of eggplant curry! Or stir-fry it with other veggies. The Moosewood Cookbook has a recipe for some sort of eggplant dip/spread that involves a lot of cumin, too, that's pretty tasty.
