Cook's Illustrated adapted this recipe and it's worked great for me. I'm sure you can find on their web site (which costs money, but you can join for free for a few days) or looking through the library's copies (or at a used bookstore). But in the Cook's Illustrated recipe, you do actually knead the dough, but no more than ten times.
I love Cook's Illustrated. They can be a bit snobby sometimes, and thier recipes always take longer than they indicate, but they always turn out right.
