Dining in China is a germophopbe's nightmare. Let's just get that out of the way right now. It's not because the food isn't cooked properly (you can usually depend that it is, and if not, stick to hot pot and let it continue cooking for a bit before you dig in). Rather, it's how it's served.

We live in a small town of about 800 year-round residents, the closest big city has 30-40k, and no good Asian food. We had a good place for sushi and another for Thai in Las Cruces, but not Chinese, and the sushi place closed. We finally found a good Chinese place in El Paso: it has one page in the menu of things like beef tendon and chicken feet, so you know it's pretty authentic! El Paso also has an excellent Vietnamese restaurant that has amazing Banh Mi sandwiches and great Pho ( ... )
