If you have a leftover roast chicken carcass... it is a horrible shame to waste it. So, you make stock from it.
Otherwise, you just end up throwing away the bones. And then Bill cries and is very sad.

Heh. He thought it was a weird habit at first, but at this point he basically looks for excuses to con me into making stuff from bones.
