For dishtowels I always use cotton. ALWAYS. I love peaches n' creme yarn the best, though lion cotton is very nice (more expensive, though) and sugar n' creme is cheaper but also easy to work with. (Sugar n' cream is what you'll find at Michaels, but Peaches n' Creme is the softer cotton, and costs very little money. You can order it online.)
For other stuff, I use wool blends, usually. I'd like to get into some of the nice cashmeres and merinos someday, esp.
So, are you on Ravelry?

If so, find me there. I'm boadiccea there as well. If you aren't, you can sign up for an invitation and be on the site in about a week. it's a WONDERFUL resource for knitters and crocheters. You can track your progress on projects, track your yarn stash (and have yarn, patterns, and needles all link to each other so you can track usage), get lots of free patterns, and wonderful forums on a wide variety of topics, not all yarn-related.
Let me know if you're on there or join sometime, ok? :)
