I had the same issue the first few weeks. Just letting the nerves get to you. I don't know what changed it, but some time during the week of Spa, I just suddenly was much calmer during starts. And it helps a LOT. I used to spin on the first few laps so many times. And races where I'd claw my way back up showed I would have been 2nd or 3rd without the spin and it's like man... if I'd just taken it easy at the start I'd have wound up much higher. So once I stopped psyching myself out, even if I'd lose places on the first lap, I'd do better because I'd out-live the guys who DO mess up
