I'd like the idea of Ryan/Esposito, but it wasn't until Den of Thieves that I really saw enough of them to love the idea. I haven't read much fic for them, but these were absolutely gorgeous.
The second was just adorable, and the first kind of broke me a little...gah, poor Esposito. :(

I was the same way--Den of Thieves was the first time I really sat up and took notice of them as a potential pairing. I've been rewatching the series from the beginning, though, and now that I've seen it once, there's a lot of other little things that I hadn't picked up on. Facial expressions and the like. Seeing their relationship in DoT kinda helped me re-evaluate everything prior to and look at it in a different light, and it's rapidly approaching status as a favourite pairing.
Not to mention that one of the writers, Jose Molina, has apparently made it his personal goal to ensure that Ryan/Esposito fanfic eclipses Castle/Beckett. I love it when writers get on board with the fans, even the crazy ones.
