Does the cooking process really bake off the alcohol in your dishes??

I'm not much for drinking and I'm often not too fond of food with quite a bit of alcohol. There will be the occasional dish that surprises me, though.

One year my grandmother made a rum cake that was so potent m alcoholic uncle couldn't go near the thing. She swore it had all "baked off" but I had a rather large piece and I can say, with confidence, that it certainly did not!
